Scott... I also have a MacBook Pro and also an iMac 24" that is totally tricked out. I never do video editing/rendering on the laptop... too painful. I always do those tasks on the iMac. It sounds like you may be using Final Cut Express (which I have used). I use Final Cut Pro and the tasks you mention are always time consuming. I just can't justify the cost of a Mac Pro (although I would love to have one)... so, the iMac was the next choice for me for graphics-intensive work.
